I look forward to trying some low carb recipes for the instant pot. I’m a fan of Maria’s recipes from a nutritional standpoint, as well as ease to make, and flavour. I wanted her Instant Pot book because I want to get better use of the appliance, and stay low carb.

I have been reading about the Keto Diet for months, doing all of the research to make a very informed decision about whether or not it truly is healthy, and I finally decided to take the plunge last month, just before this book came out.
Since I’m a newbie, I want to eat foods that don’t make me feel deprived, don’t taste like diet food, AND I want to make meals as quick and easy as possible. So this cookbook is honestly the ONLY Keto recipe book that I have purchased and plan to purchase.
First of all, since you just throw all the ingredients into an Instant Pot and dinner is magically ready in an hour or less, that was the biggest selling point for me.
Secondly, this cookbook is SERIOUSLY THICK with high quality glossy pages. Included are appetizers, soups, a million different main courses, desserts, and more!
And what REALLY cinched it for me? Every recipe can be made dairy-free (if you so desire), and the book tells you exactly what substitutions work best!
All macros are included with each recipe along with full-page, colorful, and appetizing food photography. Trust me, you need this cookbook.

I admit it – I am an unabashed Maria Emmerich fan, and own all her Keto Cookbooks including this new one, “hot off the press”. I initially bought this Instant Pot cookbook so that I could use my slow cooker more as the recipes are written to use either appliance. But with Christmas coming it seemed like a good time to ask for an Instant Pot as a gift. I make no secret of being a little afraid of using a pressure cooker appliance. That being said, I have already put tabs on the many of Maria’s recipes that I have cooked previously “the old fashioned way” and want to try with my new Instant Pot. Some may complain they are duplicated elsewhere in other books but I love seeing the potential to use different cooking methods and at the same time keep things simple. The Instant Pot certainly offers that. I now own 9 of Maria’s books, and especially love that the photos are included for each and every recipe. They are one of the main reasons I enjoy this and all her other cookbooks. I will not buy a cookbook if it doesn’t have pictures. As other reviewers have said, this book does not disappoint, even for a fairly novice 65 year old Keto cook like me. Maria does not just sharing her nutritional knowledge, she makes a point of communicating with her customers as if they are friends for life. More than praising this new cookbook, I also want to praise her personal and business ethics as well. For example, there is also a Maria Emmerich Keto Instant Pot FaceBook Group for those interested in learning more about using an Instant Pot and trying out these recipes. Acknowledging some nutritional errors in the recipes, I still feel this book is worthy of five stars due to overall value of the recipes, photos, and general information she has provided.

I purchased this book for myself for Christmas, and I thoroughly enjoyed thumbing through it Christmas morning! I marked lots of recipes I want to try (see pic above). I am such a fan of Maria Emmerich—her style of Keto makes the most sense to me based on my own health goals as well as what I know about others—which is why she gets my “dietitian seal of approval”. ♥️
I don’t have an Instant Pot but do have a pressure cooker. I thought I would try some recipes in it first, and then purchase an Instant Pot if needed. In looking through these recipes, I love that there are directions included for slow cookers for many of the recipes as well. This style of cooking also makes sense for busy families (especially if they will be gone all day and want to come home to a meal that’s already done) so I’m glad she took the time to adapt recipes for both. As with all of her recipe books, there are some consistently great things to note. For this book, there’s a nice introduction which explains the difference between the Instant Pot, pressure cookers and slow cookers as well as many other useful Instant Pot tips. The recipes are nicely organized and include pretty pics plus nutrition information. There’s a visual recipe index at the back of the book which includes a tiny snapshot of each recipe; there’s also an allergen index, which is so helpful in today’s world of folks with one or more food allergies. I’m super excited to try these recipes and see if my pressure cooker will work. I did see a number of recipes that require Instant Pot gadgets and accessories, so it’s quite likely that I will need to acquire additional items if I wish to fully use this book. In the meantime, though, I can always use my slow cooker. It’s win-win really. I have other slow cooker recipe books but they aren’t designed for Keto (so I don’t use them). With this book, I have a Keto slow cooker book at a minimum, and a source of inspiration to step it up with an Instant Pot if I want to take it to the next level. 🙂

I’ve been a fan of Maria’s for years. Her recipes taste great and also keep me feeling my best. I have an Instant Pot but I knew I wasn’t using it to the max. I was really looking forward to this book. I have all of her books – and now I think this might be my favorite.
I have endometriosis. Eating keto keeps me healthy and pain-free. This year I also had my keto baby girl. I finally able to conceive, but things have been very busy. We haven’t had a lot of time to have home cooked food since I started back at work. I love to cook, but I don’t have time. The cookbook has both slow cooker and IP directions. We can make IP dinner and prepare something in the slow cooker for the next night.
Our family has a lot of food allergies, some sort of unique (dad’s onion and basil allergy). We are all allergic to gluten (I have an epi pen). I sent one to my parents and one to my sister. The recipes and directions are so easy my teenage son wants to start making meals from it. He’s starting to use the slow cooker too, so this is a good book for him to have at the house.
Finally, we had all been sick this past week and had the immune boosting soup (page 132). My husband isn’t keto but he smelled it and said it was irresistible. Our daughter had some of the broth and absolutely loved it. Came together quickly and was easy enough to make while the baby was distracted for a few minutes.
Thanks to Maria and her family. They’ve done so much for us, and they don’t even know us.

After reading several posts by friends on social media about their love of Instant Pots, I decided to gift myself one for Christmas. One of the justifications I used for the purchase was due to the publication of this cookbook. As a keto dieter, I wanted to have the convenience offered by pressure cooking but without the carb-laden recipes I was seeing online. This cookbok by Maria did not disappoint.
As always, Maria explains the methods, tips, tricks, and some of the science behind the diet and ingredients in an easy-to-follow and beautifully illustrated way. The recipes are perfect for novice cooks or novice instant pot cooks. For experienced cooks, the recipes serve as a great base which allow for customization or modification as well. Detailed macro information is included for strict keto adherence, as well.
My only regret, at this point, is that my larger Kindle fire tablet refuses to charge and I’m stuck using a 7 inch tablet in my kitchen while trying to cook. Even Maria’s magic touch isnt going to solve that problem.
If you want to try an instant pot, keto dieter or not, this is a great tool in your kitchen. I am looking forward to the coming publication of Maria’s Air Fryer cookbook to add to my library, too.

I received a slow cooker for christmas so was looking for a good book for a newbie to slow cooking and this was recommended to me as I have been low carb for over two years.
The book contains a lot of useful information for a beginner around the use of your pot, and specific instructions on using a slow cooker, rather than instant pot, for each recipe. It’s obvious that thought went into making this an all-in-one solution for anyone looking to get into low carb slow/instant cooking.
I cooked the ham and cauli au gratin the other night and it went down extremely well!
My only negative would be the use of cup measurements rather than metric, but that’s just me being a picky european!

Every single recipe we have tried has been great. It goes fast, ingredients are easy to find, and everyone is happy! I was surprised at how well cabbage works as a pasta replacement!
